When I have to make something quick and delicious out of the chicken breast, this is usually my go to option. And for some reason, everything seems to taste so much better if it is wrapped in ham.

This dish is great because it is light and after eating it you don’t feel like passing out on the couch. So, write down the ingredients, go get some groceries and let’s start cooking.
Ingredients:
Chicken:
- 1 small chicken breast
- parma ham (you can use prosciutto or serrano ham)
- rosemary
- parmesan cheese
- paprika spice
- salt and pepper
Side salad:
- arugula
- carrot
- tomato (any kind)
Dressing:
- honey
- mustard
- lemon juice
- olive oil
- salt and pepper
Preparation:
First, we have to thin out the chicken breast so it would cook faster. To do that, take the chicken breast and place it in-between two layers of cling film (I usually fold cling film in half to give it additional strength, so technically it is two double layers of cling film) and beat it with a meat mallet of a heavy pot or a pan until it is fairly thin. Season chicken breast with salt and pepper, add chopped rosemary and sprinkle some paprika on the top. Then grate some parmesan cheese on the top and cover it with parma ham.
Cook in the pre-heated pan on a medium heat until ham becomes crispy, then flip it over and cook it until golden brown.

Once chicken breast is cooked, take it out of the pan and let it rest for a couple of minutes.
Meanwhile we are going to make the salad.
Let’s start with the dressing. Into the mixing bowl add 1/2 teaspoon of honey, 1/4 teaspoon of mustard, a splash of lemon juice and a pinch of salt and pepper. Mix everything up and slowly whisk in around 2 tablespoons of olive oil.
Now to make a salad peel the carrot. After it is peeled, use the same peeler to shave the carrot to create these beautiful long strips. Then add a good handful of arugula and the cut tomatoes of your liking and dress everything with the dressing you just made.

At this moment you chicken breast should have rested enough. Cut it in half and serve it with this light and fresh salad.
