There is something very romantic about making the bread. I love every second of it. And the beautiful smell of a freshly baked bread makes you feel like nothing else in the world.
Some breads take very little time to make and some take hours. This bread is very easy to make. Most of the work you can do the night before and enjoy the freshly baked bread in the morning.
Crispy on the outside, soft and moist on the inside, this is one of my favorite breads to make.
I don’t think I need to say anything else, so let’s start baking!!
- 1 kg of all-purpose flour
- 780 ml of warm water
- 1g of dried yeast
- 20 g of salt
Add yeast to the warm water, mix and set aside. In the separate bowl mix flour and salt. Now mix all the ingredients together. There is no need to knead this dough. Simply mix it with your fingers until it is just combined, cover with a damp kitchen cloth and let it rest for 20 minutes.
We will do 4 folding sessions, one every 2 minutes.
After 20 minutes fold the dough by stretching it from the side and pulling it towards the middle. Your hands should be wet at all times so the dough wouldn’t stick to your hands. Fold for a couple of minutes and let is rest for additional 20 minutes. Repeat this process four times.
After the fourth fold cover the bowl with cling film and a clean kitchen cloth and let it rest over night for around 12 hours.
In the morning your dough will be nice and bubbly and you will see a big change in the volume.
Dust the preparation surface with flour and take the dough out. Before taking it out light cover the sides of the bowl with flour so it would be easier to take it out.
Once taken out, divide the dough into two equal parts. Shape the dough into beautiful round loafs by stretching the dough from the sides and pulling towards the middle.
Once it is shaped transfer it to a flour dusted bowls, cover with a clean kitchen cloth and let it rest for another hour.
Preparation for baking:
Pre-heat the oven to 230 degrees Celsius (450 degrees Fahrenheit). Pre-heat your baking dish together with the oven. I am using my cast iron skillet. Also place a sheet pan at the bottom of the oven. Once we put the bread in the oven, we will pour some boiling water to the sheet pan to create the steam. Steam is essential when baking the bread. It doesn’t allow the bread to build the crust too early, so the bread rises beautifully before forming an incredible crispy outside.
After an hour transfer the dough from the proofing bowls to the hot baking tray (or in my case- cast iron skillet), put it in the oven, pour some boiling water in the sheet pan at the bottom of the oven and bake the bread for around 40 minutes. Once the first loaf is done, put the second one it.
Let the bread rest for at least 20 minutes before eating it.
