Aren’t you tired of cheese and ham toasts?
I’m not.. but I do love to change things up a bit once in a while.
This time we are making two different breakfast toasts. But first let’s talk about bread. What kind of bread should you choose? Well it is really up to you, however the most common type of bread for breakfast sandwiches and toast is sourdough. For this recipe I use something similar, but not quite sourdough. It is a rustic style bread. Easy to make and incredibly delicious. So let’s jump into the recipe.
First breakfast toast is going to be cherry tomato and home-made ricotta toast and the second one is going to be Philadelphia cheese and cured salmon toast.
Cherry Tomato and Home-made Ricotta Toast
To make the ricotta cheese heat up 500 ml of whole milk gently on a medium heat. Stir the milk occasionally. Once the milk starts to simmer squeeze the juice out of one lemon. The milk is going to immediately curd up. Turn off the heat and let the milk sit still for around a minute. This way we will know that the lemon juice did all the work. Now strain the cheese through the cheese cloth or a fine sieve. The liquid is called whey and the stuff that is left in the cheese cloth is our ricotta cheese. Do not forget to season it with salt, otherwise it might taste a little bland. If you want the ricotta cheese to be more spreadable then add a little bit of the whey back into the ricotta cheese.
In the separate bowl cut some cherry tomatoes, add a handful of toasted almonds, a couple of leaves of chopped basil and rosemary, add a splash of olive oil and season it with salt and pepper. Mix it all up.
Assemble the toast
Toast the bread, then add the home-made ricotta cheese and top it up with cherry tomato and toasted almond mix. Drizzle everything with a little splash of extra virgin olive oil, sprinkle some kosher salt and if you like, you can add some balsamic glaze as well.

Salmon and Philadelphia Cheese Toast
In a bowl add the original Philadelphia cheese, some jared horseradish, a pinch of salt and pepper. Mix everything together until smooth.
Toast the bread, spread the horseradish cream, put some arugula and top it up with cured or smoked salmon. Finish the toast with a couple of drops of lemon juice and few stems of fresh dil.
